apending/writing to a text file

is there a command that would let me write information to a .txt file? (instead of the structure of the INI file). Also, is there one to append information? Like how the logging works. would be very useful.

If not, could it be added? Or is there another way of accomplishing it?

You would use FSO for that. The File System Object. Its very widely used with VBS, lots of documentation on it.
